Ingredients
  

Main Ingredients

  • 2 Tablespoon olive oil
  • 2 whole shallots thinly sliced
  • 6 cloves garlic thinly sliced
  • 1 Tablespoon fresh ginger minced
  • ½ whole bell pepper thinly sliced
  • 1 pound ground chicken lean, or ground turkey
  • 2 teaspoon light brown sugar
  • 1 Tablespoon fish sauce or substitute hoisin sauce
  • ¼ cup low-sodium soy sauce 64g
  • 1 Tablespoon oyster sauce
  • 2 Tablespoon Asian Garlic Chili Sauce or Sambal Oelek, to taste
  • ½ cup low-sodium chicken broth 114g
  • ¼ cup water 57g
  • 1 teaspoon cornstarch
  • cup fresh basil leaves
  • Cooked Jasmine rice for serving

Instructions
 

Cooking Instructions

  • In a wok or large skillet over medium high heat, add the oil. Once hot but not smoking, add shallots, garlic, ginger, bell peppers (and any other veggies) and fry for 3 minutes.
  • Push veggies off to the side. Turn heat to high and add ground chicken, breaking into small pieces as it cooks.
  • In a small bowl, stir together the brown sugar, fish sauce, soy sauce, chili sauce, oyster sauce, cornstarch, chicken broth, and water then add to the pan. Cook for 3 minutes.
  • Add the basil then stir-fry until wilted. Serve over hot cooked rice.

Notes

Make the sauce and chop all of the vegetables in advance. Before adding basil, store in a freezer safe container and freeze for up to 3 months. For spiciness, add red Thai peppers with the vegetables. Add more vegetables like asparagus or zucchini. Swap protein for ground beef or cubed tofu for a vegetarian option.
