  • 1 lb Ground Beef or Shredded Cooked Beef
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Black Pepper freshly ground preferred
  • 1 teaspoon Garlic Powder feel free to use fresh garlic
  • 1 teaspoon Cumin optional
  • 12 oz Corn Tortillas sturdy tortillas recommended

For Frying

  • 2 cups Vegetable Oil for frying

For the Sauce

  • 4 medium Roma Tomatoes canned tomatoes are a good alternative
  • 4 ea Dried Guajillo Chiles substitute with another mild dried chile if needed
  • 2 ea Dried Chile de Árbol optional
  • 3 cloves Garlic Cloves or use garlic powder
  • 1 teaspoon Oregano preferably Mexican oregano
  • 2 cups Chicken or Beef Broth substitute with vegetable broth for vegetarian
  • 2 tablespoon Vinegar white or apple cider vinegar
  • 1 tablespoon Sugar optional to balance acidity

Garnishes

  • 1 medium Chopped White Onion sprinkle generously
  • ¼ cup Fresh Cilantro for garnishing
  • 2 ea Lime Wedges serve alongside

Main Instructions

  • Prepare Filling: Season the ground beef with salt, black pepper, garlic powder, and cumin. Cook in a skillet over medium heat until browned, about 7-10 minutes. Set aside to keep it warm.
  • Warm Tortillas: Lightly warm the corn tortillas on a dry skillet or in the microwave until pliable.
  • Fry Tacos: Heat vegetable oil in a deep pan to 350°F (175°C). Fry the filled tacos for about 2-3 minutes on each side until golden brown and crispy. Drain on paper towels.
  • Make Sauce: In a blender, combine roasted Roma tomatoes, dried guajillo chiles, garlic, oregano, and broth. Blend until smooth, then pour into a saucepan.
  • Simmer Sauce: Bring the sauce to a gentle simmer over medium heat. Add vinegar, salt, and optional sugar to balance flavors. Simmer for about 10 minutes.
  • Serve: Arrange the crispy tacos in bowls, ladle the warm sauce generously over each taco, and garnish with chopped onion and fresh cilantro. Serve with lime wedges.

Notes

For added crunch, optionally top with sliced radishes or shredded cabbage.
