Steps

  • Preheat your oven to 375°F (190°C).
  • If using a whole head of cauliflower, cut it into florets and pulse in a food processor until it resembles rice. Alternatively, use pre-packaged cauliflower rice.
  • In a large skillet over medium heat, add olive oil. Once hot, add the diced onion and cook until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
  • Increase the heat to medium-high, then add the ground beef or turkey to the skillet. Cook until browned, breaking it apart with a spatula.
  • Stir in the taco seasoning, diced tomatoes, black beans, corn, and cauliflower rice. Mix well to combine and season with salt and pepper to taste.
  • Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.
  • Sprinkle the shredded cheese evenly over the top of the casserole.
  • Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool slightly. Garnish with fresh cilantro if desired.
  • Slice and serve warm.
