Ingredients
  

For the sweet potatoes

  • 4 medium sweet potatoes Washed and pierced with a fork

For the apple filling

  • 3 medium apples Peeled, cored, and diced
  • 2 tablespoons maple syrup Provides sweetness
  • 1 teaspoon cinnamon For flavor
  • 0.5 teaspoon nutmeg For flavor
  • 1 pinch salt Enhances the overall flavor
  • 1 tablespoon butter Adds richness to the filling (optional)

Preparation

  • Preheat the oven to 400°F (200°C).
  • Wash the sweet potatoes and pierce them a few times with a fork.

Baking the Sweet Potatoes

  • Place the sweet potatoes on a baking sheet and bake for 45 to 60 minutes, or until tender enough to be poked with a fork.

Preparing the Apple Filling

  • In a skillet over medium heat, melt the butter (if using).
  • Add the diced apples, maple syrup, cinnamon, nutmeg, and salt to the skillet.
  • Cook the apple mixture for 5 to 7 minutes until the apples soften and caramelize slightly.

Assembling the Dish

  • Once the sweet potatoes are done baking, let them cool for a few minutes.
  • Cut the sweet potatoes in half lengthwise and scoop out a bit of the flesh to create a bowl.
  • Mix the scooped-out sweet potato flesh with the apple filling.
  • Spoon the apple mixture back into the sweet potato halves. Optionally drizzle some extra maple syrup on top.

Notes

This dish pairs nicely with light salads or roasted veggies. You can substitute other fruits or nuts for variety.
