Stuffing

smoked herring
boil to reduce salt

Instructions
Preparation
Peel and wash plantains
Pat them dry
Cut them into one and a half inch slices
Frying
Heat oil to deep fry plantains
Toss in plantains into hot oil so they are submerged
Fry them for about 7 minutes
Place them on paper towel for about five minutes. You don't want them to be too dry
Using your citrus squeezer, press the plantain slices into cups
Place on paper towel or tray
Then place cups in the deep fryer or sauce pan with enough oil to submerge them
Remove when golden brown
Stuff with your favorite filling
Enjoy!

I used smoked herring for the stuffing.
