Equipment

  • loaf pan
  • Mixing Bowls

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas mashed
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • ½ cup chopped pecans
  • ¾ cup chopped walnuts

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set it aside.
  • In a medium bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon. Set aside.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs to the butter-sugar mixture, one at a time, beating well after each addition.
  • Stir in the mashed bananas, milk, and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Fold in a ¼ cup of the chopped walnuts and all of the chopped pecans.
  • Pour the batter into the prepared loaf pan, spreading it evenly.
  • Arrange the remaining ½ cup of chopped walnuts over the top of the loaf.
  • Bake in a preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the loaf from the oven and let it cool in the pan for about 10 minutes.
  • Transfer the bread to a wire rack and let it cool completely before slicing. Slice and enjoy!

Notes

Ensure bananas are ripe for optimal sweetness. Adjust cinnamon amount to taste. Allow loaf to cool completely before slicing to hold shape. Can add nutmeg or cloves for extra flavor. Store in an airtight container for up to 3 days or freeze for up to 3 months.
