Ingredients
  

Chicken Ingredients

  • 5 pieces chicken breast
  • buns brioche buns
  • amount vegetable oil enough for deep frying
  • 1 dash salt
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon white pepper
  • 1 tablespoon hot hungarian paprika or regular
  • 1 tablespoon slap yo mama or cajun seasoning
  • 1.5 cups buttermilk

Flour Mixture

  • 2 cups flour
  • 4 tablespoons cornstarch
  • 1.5 tablespoons slap yo mama or cajun seasoning
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika

Egg Mixture

  • 2 pieces eggs
  • 1 tablespoon franks hot sauce
  • 1 cup buttermilk

Spicy Mayo

  • 0.25 cups mayo
  • 0.25 teaspoon cayenne pepper

Instructions
 

Marinating and Frying

  • In a large bowl season chicken breast with salt, onion powder, garlic powder, paprika, slap yo mama, white pepper, and buttermilk. Marinate for 30 minutes - 2 hours.
  • Heat a large deep pot with oil and allow to slowly heat up to 350F. Insert a wooden spoon in the oil; when it starts to bubble, it's ready.
  • In a separate bowl, mix flour, cornstarch, onion powder, garlic, paprika, and slap yo mama. Set aside.
  • In another bowl, mix eggs, franks red hot sauce, and buttermilk.
  • Remove chicken from refrigerator after marinating. Remove chicken one by one from buttermilk, trying to remove as much as possible to avoid a thick coating.
  • Dip chicken in egg mixture, then in the flour mixture, and fry for 12-15 minutes or until golden brown.
  • In a medium-size pan, coat buns with butter and pan fry until golden brown. Place chicken on buns with spicy mayo and pickles.

Notes

Enough to season 3-6 chicken breasts depending on the thickness of your chicken breast. I used brioche buns, brand unknown. Marinated the chicken for 30 minutes.
