Ingredients
  

Dough Ingredients

  • 1.5 cups warm water lukewarm, around 100°F (38°C)
  • 2.25 teaspoons instant or active dry yeast (1 standard packet)
  • 1 tablespoon brown sugar or granulated sugar
  • 1 teaspoon salt
  • 1 tablespoon unsalted butter melted and slightly cool
  • 3.75-4 cups all-purpose flour plus more for hands and work surface

Baking Soda Bath

  • 0.5 cups baking soda
  • 9 cups water

Optional Toppings

  • spicy cheese sauce for serving
  • favorite mustard for serving

Instructions
 

Making the Dough

  • Whisk warm water, yeast, and sugar together in the bowl of your stand mixer. Cover and allow to sit for 5 minutes until foamy.
  • Add salt, melted butter, and 3 cups of flour. Beat on low speed for 1 minute, then add ¾ cup of flour.
  • Keep mixing until the dough comes together and pulls away from the sides of the bowl.
  • Knead the dough for 5 minutes until it feels slightly tacky but not sticky.
  • Cover lightly with a towel and allow to rest for 10-30 minutes.

Shaping and Baking

  • Preheat oven to 400°F. Line baking sheets with parchment paper.
  • Cut dough into 6 equal pieces and roll each piece into a 20-inch rope. Cut ropes into 1.5 - 2 inch pieces.
  • Prepare baking soda bath by mixing water and baking soda in a large pot, bringing to a boil.
  • Drop pretzel bites into boiling water for 10-15 seconds, then place on prepared sheets.
  • Sprinkle with coarse salt and bake for 15 minutes until golden brown.
  • Serve warm and store leftovers at room temperature.

Notes

If freezing, do not top with salt before baking. To reheat, brush with water and bake at 350°F for 10 minutes or microwave until warm.
