Ingredients
  

Chicken and Seasoning

  • 4 pieces boneless skinless chicken breasts
  • 2 tablespoons butter
  • to taste salt
  • to taste pepper
  • 2 teaspoons Italian seasoning

Rice Ingredients

  • 1 cup uncooked white rice
  • 2.25 cups chicken broth I used low sodium
  • 1 piece juice of lemon
  • 1 teaspoon Italian seasoning

Instructions
 

Cooking Instructions

  • In a large pot, melt butter over medium heat. Season chicken with salt, pepper, and Italian seasoning. Add chicken to the pot and cook until browned on both sides.
  • Remove chicken from the pot and set aside. In the same pot, add rice, chicken broth, lemon juice, and the remaining Italian seasoning.
  • Stir well, bring to a simmer, then return the chicken to the pot. Cover and cook on low for 20 minutes or until the rice is cooked and chicken is done.
  • Remove from heat and let sit for 5 minutes before serving. Enjoy your one pot meal!

Notes

This dish is a perfect easy weeknight dinner that requires minimal cleanup.
