Chocolate Coating

  • ½ cup dark chocolate chips
  • 1 tablespoon coconut oil

Preparation

  • In a food processor, combine the chopped pecans, pitted dates, oats, maple syrup, and coconut flour. Blend until the mixture becomes sticky and well combined, creating a dough-like consistency.
  • Using your hands, form the mixture into small balls approximately 1 inch in diameter.
  • Place the formed balls onto a baking sheet lined with parchment paper, ensuring they are evenly spaced to prevent sticking.
  • In a microwave-safe bowl or using a double boiler, melt the dark chocolate chips together with the coconut oil until smooth.
  • Dip each pecan pie ball into the melted chocolate coating, turning to fully cover each one. Allow any excess chocolate to drip off.
  • Refrigerate the chocolate-coated pecan pie balls for at least 30 minutes to set.

Notes
