Ingredients
  

Bread and Base

  • 2 slices Thick Slices of Bread Tiger bread, sourdough, or ciabatta recommended for sturdiness
  • 2 teaspoons Mayonnaise optional; softened butter can be used as a substitute or omitted for vegan

Topping Mix

  • 100 grams Cheddar Cheese, grated gouda or mozzarella can be substituted
  • 30 grams Pickled Jalapeños, sliced fresh chillies can be used but may not soften when grilled
  • 1 tablespoon Chives, finely chopped onion greens can substitute
  • 0.5 teaspoon Garlic, minced garlic powder can be used if fresh is unavailable

Garnish

  • 1 Avocado, sliced optional, adds creamy texture

Instructions
 

Preparation

  • Heat your frying pan over high heat to prepare for toasting the bread.
  • Dry-toast the two slices of bread on one side in the pan until golden and crispy, about 2-3 minutes.
  • Spread mayonnaise on the untoasted side of the bread, then place the bread with the toast side down on a baking tray.
  • In a bowl, combine grated cheddar cheese, sliced jalapeños, chopped chives, and minced garlic. Mix well for even distribution of flavors.
  • Divide the cheese and chilli mixture evenly and pile generously on each slice of prepared bread.
  • Place the baking tray under the oven grill about 15cm from the heat source. Grill until the cheese melts and becomes caramelized, watching carefully to avoid burning.
  • Top the grilled toast with sliced avocado or serve it on the side. Optionally, sprinkle extra chives or spring onions for freshness.

Notes

You can substitute mayonnaise with softened butter or omit it to keep the recipe vegan friendly. Use fresh chillies instead of pickled jalapeños, but they may remain firmer after grilling. For a dairy-free version, replace cheddar with vegan cheese alternatives and skip the mayonnaise or use vegan spreads. Keep a close eye when grilling the toast to prevent the cheese from burning due to the high heat. Adding avocado is optional but offers a creamy balance to the spicy chilli and melted cheese.
