Ingredients
  

  • 1 lb chicken breast, cut into 1-inch chunks
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon black pepper

  • 2 tablespoons all-purpose flour
  • 1 tablespoon butter
  • 2 tablespoons extra-virgin olive oil, divided
  • 1 shallot, minced
  • 4 cloves garlic, minced
  • 0.25 teaspoon red pepper flakes

  • 2 cups chicken broth
  • 1 lb cheese tortellini (16oz)
  • 1 cup heavy cream
  • 3 cups spinach, roughly chopped
  • 0.5 cup parmesan cheese, freshly grated
  • Fresh basil, for serving

Instructions
 

  • Cube the chicken and place in a medium bowl. Season with salt, pepper, Italian seasoning, and smoked paprika, then toss to coat. Add the flour and gently toss.
  • Heat a large cast iron skillet or ceramic-coated nonstick skillet over medium heat. Add the butter and one tablespoon olive oil. When hot, add the chicken in an even layer and cook until browned and cooked through. Remove to a bowl or plate.
  • Add the remaining tablespoon of olive oil, garlic, shallot, and sun-dried tomatoes. Saute for three minutes, stirring often. Season with red pepper flakes and another pinch of salt and pepper. Add tomato paste and broth, stirring to combine and scrape up bits from the bottom.
  • Stir in the tortellini, bring to a simmer, and reduce heat. Cover and let simmer for 3-4 minutes until tortellini is cooked, stirring halfway through.
  • Remove lid and stir in the chicken, spinach, cream, and parmesan cheese. Serve hot with fresh basil, more parmesan, and freshly cracked black pepper.

Notes

To reheat leftovers, add a splash of water, reheat in the microwave or stovetop, stir, and enjoy. The tortellini soak up the sauce quite a bit. Adjust tortellini amount as needed.
