For the Chicken
- 2 pieces boneless, skinless chicken breasts diced
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1 tablespoon tomato paste
- 1 tablespoon honey
- 1 teaspoon chili flakes
- 1 tablespoon lemon juice
- Salt and black pepper to taste
- Fresh parsley chopped (for garnish)
For the Cucumber Salad
- 1 cup diced cucumber
- ½ cup chopped cherry tomatoes or diced red bell pepper
- 1 teaspoon lemon juice
- 1 tablespoon olive oil
- Salt to taste
For the Bowl Base
- ½ cup hummus
- 1 teaspoon olive oil
- ¼ teaspoon smoked paprika or chili powder
Preparation
Dice the chicken, mince the garlic, and chop the cucumber, tomatoes or bell pepper, and parsley.
In a bowl, mix olive oil, garlic, tomato paste, honey, chili flakes, lemon juice, salt, and pepper. Add the chicken and coat evenly. Let it sit for 20–30 minutes or refrigerate for up to 2 hours.
For whole chicken breasts: Preheat grill to medium-high. Cook 5–7 minutes per side until internal temperature reaches 165°F. Rest, then dice.
For diced chicken: Use a grill basket and cook 10–12 minutes, stirring occasionally, or thread onto skewers and grill 3–4 minutes per side.
Combine cucumber, tomatoes or bell pepper, lemon juice, olive oil, and salt to make the cucumber salad. Toss and set aside.
Spread hummus in the bottom of each bowl. Drizzle with olive oil and sprinkle paprika or chili powder.
Layer grilled chicken over the hummus. Add the cucumber salad and finish with chopped parsley.
Enjoy immediately or pair with warm pita.
