Bread and Spreads
- 12 slices sandwich bread
- 4 Tbsp. mayonnaise divided
- 1 Tbsp. prepared basil pesto
- 1 Tbsp. prepared sundried tomato pesto or pureed sun-dried tomatoes
Meats and Vegetables
- ½ lb. shaved ham
- 4 avocados peeled and sliced
- ½ lb. shaved turkey
- 8 slices bacon cut in half
- Romaine or green leaf lettuce
Cheese and Sides
- 4 slices cheese Swiss, mozzarella, etc.
- Potato chips for serving
Preparation Steps
Toast the bread until lightly golden brown; set aside.
Fry the bacon until just barely crisp, then drain on a paper towel; set aside.
In a small bowl, mix together 2 tablespoons of mayonnaise and the prepared basil pesto. In another bowl, mix the remaining 2 tablespoons of mayonnaise and the sun-dried tomato pesto.
Spread some of the basil pesto mayonnaise onto 1 side of 2 pieces of bread, layering ham and lettuce on one and avocado and bacon on the other. Place them together.
Spread sun-dried tomato pesto mayonnaise on the top of the last piece of bread, layering turkey, lettuce, avocado, bacon, and cheese before stacking it on the sandwich.
Cut the sandwiches in half diagonally and then into fourths. Serve with chips!
