Ingredients
  

Meatballs and Sauce

  • 1 lb ground beef
  • ½ cup breadcrumbs
  • 1 unit egg
  • 2 cloves garlic, minced
  • ¼ cup onion, finely chopped
  • 1 unit red bell pepper, chopped
  • 1 unit green bell pepper, chopped
  • 1 unit yellow bell pepper, chopped
  • 2 cups cooked rice
  • cup soy sauce
  • cup honey
  • 2 tablespoon ketchup
  • 1 tablespoon vinegar
  • 1 tablespoon cornstarch
  • 1 tablespoon olive oil

Instructions
 

Cooking Instructions

  • Mix ground beef, breadcrumbs, egg, garlic, and onion in a large bowl.
  • Form into small meatballs and set aside.
  • Brown the meatballs in a skillet with olive oil until golden but not fully cooked.
  • In a saucepan whisk honey, soy sauce, ketchup, vinegar, and garlic. Stir in cornstarch and simmer until thickened.
  • In a greased baking dish, layer rice and chopped peppers.
  • Place browned meatballs over the rice and pour sauce evenly over everything.
  • Cover with foil and bake at 375°F for 25 minutes.
  • Remove foil and bake an additional 10 minutes until bubbly and caramelized.

Notes

Use frozen meatballs to save time. Add chili flakes for a spicy twist. Top with cheese for a gooey finish. Make ahead and bake later. Store leftovers in the fridge for up to 3 days or freeze for longer.
