Zucchinis

  • 4 medium zucchinis

Garlic Butter Mixture

  • ½ cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Skewers

  • Wooden or metal skewers If using wooden skewers, soak them in water for 30 minutes.

Preparation Steps

  • Wash the zucchinis and cut them into thick slices, about 1-inch wide.
  • In a bowl, combine the melted butter, minced garlic, chopped parsley, salt, and black pepper.
  • Place the zucchini slices in a large mixing bowl. Pour the garlic butter mixture over the zucchini and toss until well coated.
  • Thread the zucchini slices onto the skewers, leaving a little space between each piece for even cooking.
  • Heat your grill to medium-high heat.
  • Place the skewers on the grill and cook for about 15-20 minutes, turning occasionally, until the zucchini is tender and has nice grill marks.
  • Remove the skewers from the grill and serve immediately, drizzling any remaining garlic butter over the top for extra flavor.
