Ingredients
  

Dressing

  • cup mayo preferably Hellmann's
  • 1 tablespoon mustard use Grey Poupon for a sharper kick
  • 1 tablespoon lemon juice
  • 2 tablespoon fresh dill chopped
  • 2 tablespoon fresh parsley chopped
  • 2 cloves garlic freshly minced for best flavor
  • ¾ teaspoon sea salt
  • ½ teaspoon black pepper
  • ¼ teaspoon smoked paprika

Salad

  • 3 cups chicken cut into ½-inch cubes
  • ½ cup green onions thinly sliced
  • cup celery finely diced

Instructions
 

Preparation

  • In a medium bowl, whisk together the mayo, mustard, and lemon juice until smooth and well combined.
  • Add the minced garlic, fresh dill, and fresh parsley, stirring to distribute the herbs throughout the dressing.
  • Season the dressing mixture with sea salt, black pepper, and smoked paprika. Stir well to combine.
  • Add the diced celery and sliced green onions, folding gently into the dressing.
  • Add the cubed chicken to the dressed vegetable mixture, folding gently until all chicken pieces are evenly coated.
  • Taste and adjust seasonings if needed before serving.

Notes

Let the dressing sit for a minute before adding vegetables to infuse flavors.
