  • 4 medium Carrots peeled and sliced

Brine

  • 1 cup Water
  • 1 cup White vinegar
  • 1 tablespoon Sugar
  • 1 tablespoon Salt
  • 1 teaspoon Black peppercorns optional

Instructions
 

Preparation

  • Slice the carrots into thin sticks or rounds.
  • In a pot, combine water, vinegar, sugar, and salt, then bring to a boil.
  • Place the sliced carrots in a jar and pour the hot brine over them.
  • Seal the jar and let it cool to room temperature.
  • Once cooled, store in the refrigerator for at least 30 minutes before serving.

Notes

These pickled carrots can last up to 2 weeks in the refrigerator.
