Equipment

  • large bowl
  • heatproof bowl
  • microwave
  • Rubber Spatula
  • Rolling pin
  • 9-inch round cake pan
  • Cooling Rack
  • handheld mixer

Ingredients

Dough

  • 2 and ¾ cups all-purpose flour spooned & leveled
  • ¼ cup granulated sugar
  • ½ teaspoon salt
  • ¾ cup whole milk
  • 3 Tablespoons unsalted butter
  • 2 and ¼ teaspoons Platinum Yeast from Red Star or any instant yeast (1 standard packet)
  • 1 large egg at room temperature

Filling

  • 3 Tablespoons unsalted butter extra softened
  • cup packed brown sugar light or dark
  • 1 Tablespoon ground cinnamon

Cream Cheese Icing

  • 4 ounces full-fat block cream cheese softened to room temperature
  • 2 Tablespoons unsalted butter softened to room temperature
  • cup confectioners’ sugar
  • 1 teaspoon pure vanilla extract

Instructions

Preparation

  • Make the dough: Whisk the flour, sugar, and salt together in a large bowl. Set aside.
  • Combine the milk and butter in a heatproof bowl. Microwave or heat until the butter melts and the mixture is warm. Whisk in the yeast until dissolved. Pour into dry ingredients, add the egg, and mix until a soft dough forms.
  • Transfer dough to a lightly floured surface. Knead for 3-5 minutes until smooth. Place in a greased bowl, cover, and let rest for about 10 minutes.

Filling and Baking

  • After 10 minutes, roll the dough into a 14×8-inch rectangle. Spread the softened butter, mix cinnamon and sugar, sprinkle over dough, roll into a log, and cut into 10–12 rolls.
  • Cover the pan and let the rolls rise for 60–90 minutes or until double in size.
  • Preheat the oven to 375°F. Bake for 24-27 minutes or until lightly browned. Remove from the oven and let cool.
  • Make the icing by beating cream cheese until smooth, adding butter, sugar, and vanilla until combined. Spread over warm rolls.

Storage

  • Cover leftover frosted or unfrosted rolls tightly and store at room temperature for a day or in the refrigerator for up to 5 days.

Notes

Dough can be made the night before through step 4 and refrigerated overnight. Rolls can also be frozen for up to 3 months.
