Chicken

  • 4 pieces Chicken thighs or breasts Skinless, boneless for easier cooking.

Sauce

  • 2 tablespoons Aji Amarillo paste Can be found in Latin markets or online.
  • 1 cup Heavy cream Adds richness and creaminess.
  • 3 cloves Garlic, minced Adds depth of flavor.
  • 1 medium Onion, chopped Sweetness to balance the spice.
  • 1 cup Chicken broth For a flavorful base.
  • 2 tablespoons Olive oil For sautéing.
  • Salt & pepper To taste.

Cooking Instructions

  • Heat olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
  • Add the chicken pieces and cook until browned on both sides.
  • Stir in the Aji Amarillo paste, heavy cream, and chicken broth. Cook on low heat until the chicken is cooked through and the sauce thickens.
  • Season with salt and pepper to taste. Serve warm.

Notes

This recipe can be adjusted with more or less Aji Amarillo paste based on spice preference.
