Ingredients
  

For the arepas

  • 1 ½ cups pre-cooked cornmeal
  • 2 cups warm water
  • ½ teaspoon salt

For the chicken marinade

  • 2 tablespoons vegetable oil
  • 1 ½ tablespoons savory sauce
  • 1 tablespoon mustard
  • 1 tablespoon vinegar
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the chicken

  • 1 pound boneless chicken, cut into bite-size pieces

For the slaw

  • 1 ½ cups shredded cabbage
  • ¼ red onion, thinly sliced
  • 1 tablespoon chopped cilantro
  • 1 tablespoon chopped chives

For the slaw dressing

  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 tablespoon hot sauce
  • 1 tablespoon sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons vinegar
  • 2 tablespoons sesame oil

  • In a medium bowl, mix marinade ingredients and coat chicken. Refrigerate 1 to 2 hours.
  • Cook chicken in skillet over medium heat for 8 to 10 minutes until done.
  • Mix cornmeal, water, and salt to form dough. Rest briefly and shape patties.
  • Cook arepas 5 minutes per side until golden.
  • Combine cabbage, onion, cilantro, and chives.
  • Whisk dressing ingredients until smooth.
  • Toss slaw with dressing.
  • Slice arepas and fill with chicken and slaw. Serve warm.

Notes

Do not overwork the dough for best texture. Adjust spice level in slaw dressing to taste. Serve immediately for best flavor and texture.
