Equipment

  • 9-inch Square Baking Dish
  • measuring cups
  • measuring spoons
  • medium bowl
  • sharp knife
  • small bowl

Ingredients

Fruits

  • 4 large bananas
  • 2 cups fresh mixed berries

Crumble Mixture

  • 1 can non-stick cooking spray
  • 5 tablespoons whole wheat flour divided
  • 1 cup old-fashioned oats
  • ¼ cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • a pinch salt
  • 4 tablespoons cold unsalted butter

Topping

  • cup non-fat plain yogurt
  • 1 tablespoon honey

Instructions

Preparation

  • Preheat the oven to 400 °F.
  • Peel and slice the bananas in half lengthwise.
  • Rinse the berries and pat dry.
  • Spray the baking dish with non-stick cooking spray. Place the banana halves cut side down in the dish.
  • Mix the berries with 1 tablespoon of flour. Sprinkle the berries over the bananas.
  • In a medium bowl, combine 4 tablespoons of flour, oats, sugar, and spices. Stir to combine.
  • Cut the cold butter into small pieces. Add it to the bowl. Using your fingers, quickly mix the butter into the dry ingredients until the mixture is crumbly.
  • Spread the crumbly mixture evenly over the fruit. Press down slightly.
  • Bake for about 10 to 15 minutes or until the crumble is firm and golden brown.
  • While the crumble is baking, mix the yogurt and honey in a small bowl to create a lighter version of whipped cream.
  • When the crumble is ready, spoon 1 tablespoon of the yogurt and honey mixture over each serving.

Notes

When berries are out of season, use frozen berries. Bring them to room temperature and drain any liquid before adding. Use the reserved berry liquid to flavor sparkling water or club soda for a naturally sweet, low-calorie drink. If using whole strawberries, slice them in half or quarters before using.
