Preparation Steps

  • Heat a medium saucepan over medium heat and add olive oil or butter. Stir in the long-grain white rice and toast for about 2 minutes until the edges turn translucent.
  • Pour in the chicken or vegetable broth, bring to a boil, then reduce the heat, cover, and let simmer for 15-18 minutes until liquid is absorbed.
  • While the rice cooks, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  • Add fresh spinach in batches, stirring until it wilts, which should take about 2-3 minutes.
  • Once the spinach is wilted, remove from heat and stir in the heavy cream off the heat. Return skillet to low heat and let it thicken for about 3 minutes.
  • Gently fold the cooked rice into the creamy spinach mixture, adding the grated Parmesan cheese. Season with salt and freshly ground black pepper to taste.
  • For extra flavor, sprinkle a touch of nutmeg over the dish before serving.
