Ingredients
  

Vegetables and Beans

  • 1 cup corn kernels frozen or fresh
  • 400 g black-eyed beans canned, rinsed and drained
  • 400 g black beans canned, rinsed and drained
  • 2 capsicum deseeded and finely chopped
  • 250 g cherry tomatoes quartered
  • ½ small red onion finely chopped
  • ¼ cup fresh coriander leaves chopped
  • 1 long fresh green chilli finely chopped

Dressing

  • 1 tablespoon red wine vinegar
  • 1 tablespoon fresh lime juice
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon pure maple syrup
  • ½ teaspoon smoked paprika

Instructions
 

Preparation

  • Cook the corn in a steamer basket over a saucepan of simmering water for 2-3 minutes or until tender. Set aside to cool.
  • Combine corn, black-eyed beans, black beans, capsicum, cherry tomatoes, red onion, coriander, and green chilli in a large bowl.
  • Whisk together the red wine vinegar, lime juice, olive oil, maple syrup, and smoked paprika in a small bowl. Add the dressing to the salad and gently toss until combined. Season and serve.
