Noodles & Vegetables
- 2 packages Ramen Noodles 3 oz each
- 1 cup broccoli florets
- 1 package coleslaw mix 14 oz
Chicken & Seasonings
- 2 pieces skinless boneless chicken breasts sliced into bite sized strips
- 2 cloves garlic minced
- 1 tablespoon fresh ginger peeled and shredded
- ⅓ cup chicken broth
- ⅓ cup reduced sodium soy sauce
- 1 teaspoon cornstarch
- 1 tablespoon sesame oil
- 1 teaspoon Truvía® Brown Sugar Blend
- 1 tablespoon sesame seeds optional
- 3 tablespoon vegetable oil
Cooking Instructions
Bring medium size pan of water to boil. Add Ramen noodles and cook them according to package directions. Drain and stir in 1 tablespoon of vegetable oil. Set aside.
In a large skillet heat 2 tablespoon vegetable oil over high heat. Add chicken and cook until chicken is cooked through and no longer pink, about 5-7 minutes. Remove from skillet and set aside.
Add broccoli, coleslaw mix, and garlic and saute for 3-5 minutes. Add ginger and fry for another two minutes.
Meanwhile in a mixing bowl combine chicken broth, soy sauce, cornstarch, sesame oil, and Truvía® Brown Sugar Blend and mix until blended.
Add chicken, Ramen noodles, broth mixture into skillet and cook until heated through.
Garnish with sesame seeds if desired.
