Ingredients
  

  • 1.5 pounds boneless chicken thighs or breasts
  • 6 cups water
  • 1.5 cups diced daikon radish or regular radish
  • 0.5 large onion, chopped
  • 3 cloves garlic
  • 1 medium carrot, sliced
  • 1 small zucchini, diced
  • 2 green onions, chopped
  • Salt, to taste
  • 1.5 cups all-purpose flour
  • 0.75 cup mashed potatoes
  • 1 large egg
  • 0.5 teaspoon salt
  • 0.33 cup water
  • 1 teaspoon neutral oil
  • 3 tablespoons soy sauce
  • 1 teaspoon chili flakes
  • 1 clove garlic, minced
  • 2 teaspoons sesame oil
  • 1 green onion finely chopped

Instructions
 

  • Add chicken, water, radish, onion, and garlic to a pot and bring to a boil.
  • Reduce heat and simmer for 20 to 25 minutes until chicken is cooked.
  • Remove and shred chicken, then return broth to pot.
  • Mix flour, mashed potatoes, egg, salt, water, and oil into a dough.
  • Bring broth to a gentle boil and add carrot and chicken.
  • Add zucchini and stir.
  • Tear dough and drop into soup, cooking until dumplings float.
  • Mix sauce ingredients in a bowl.
  • Add green onions and adjust salt.
  • Serve hot with sauce.

Notes

Keep the broth at a gentle simmer when cooking dumplings. Adjust seasoning to taste using the sauce. Add extra broth when reheating leftovers.
