Ingredients
  

For the upside down bit

  • 12 tablespoons butter
  • 1.5 cups brown sugar
  • 4 bananas, sliced lengthwise into ½ inch strips

For the cake

  • 2 mashed bananas
  • 6 tablespoons butter, melted
  • 2 eggs, room temperature
  • cup plain, non-fat greek yogurt
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 cups all-purpose flour

Steps

  • Preheat oven to 350°F. Grease a 9×13 pan with butter.
  • In a small saucepan over medium heat, melt the butter and brown sugar together until glossy, about 2 minutes. Pour mixture evenly into the pan. Place sliced bananas on top of the brown sugar mixture. Set aside.
  • In a large bowl, mix together the mashed banana, melted butter, eggs, greek yogurt, sugar, and vanilla extract until combined. Stir in the baking powder and salt, then stir in the flour, mixing until just combined.
  • Spread the batter evenly on top of the bananas, and bake for 30 minutes, or until golden brown along the edges and bubbles up along the rim.
  • Allow to cool for 10 minutes before inverting over a large tray. Cake is best served warm, possibly with a scoop of vanilla ice cream!

Notes

You can also halve the recipe and make it in a 9 x 9 square pan!
