Ingredients
  

Oatmeal Cookie Crust

  • 2 cups oatmeal cookies (or graham crackers)
  • 2 tablespoons granulated sugar optional
  • 0.5 cups unsalted butter melted

Banana Cheesecake

  • 4 packages cream cheese room temperature
  • 1 cups light brown sugar lightly packed
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon kosher salt
  • 4 large eggs room temperature
  • 1 tablespoon dark rum (or rum extract)
  • 1 tablespoon banana liqueur (or banana extract)
  • 1 teaspoon vanilla extract
  • 1.25 cups bananas (very ripe, peeled and mashed)
  • 0.5 cups cornstarch

Caramel Rum Sauce

  • 4 tablespoons salted butter (or unsalted butter and a pinch of kosher salt)
  • 0.5 cups brown sugar
  • 0.25 teaspoon ground cinnamon
  • 0.25 cups dark rum
  • 2 tablespoons banana liqueur
  • 2 tablespoons heavy cream room temperature

Instructions
 

Prepare the Oatmeal Cookie Crust

  • Preheat your oven to 350°F (177°C).
  • In a mixing bowl, combine the oatmeal cookie crumbs, sugar, and melted butter until they hold together.
  • Transfer the mixture to a 9-inch springform pan and pack it.
  • Bake the crust for 10 minutes.
  • Allow it to cool and wrap the pan in aluminum foil.

Make the Banana Cheesecake

  • Blend cream cheese, brown sugar, nutmeg, and salt in a mixer.
  • Add eggs one at a time, mixing until incorporated.
  • Add vanilla, dark rum, and banana liqueur, followed by mashed bananas and cornstarch.

Bake, then Gradually Cool the Banana Cheesecake

  • Pour the cheesecake batter into the crust and bake for 1 hour 15 minutes in a water bath.
  • Cool in the oven for 1 hour, then at room temperature for 30 minutes.
  • Refrigerate for 4 hours or overnight.

Prepare the Caramel Rum Sauce

  • Melt butter in a sauté pan and whisk in brown sugar and cinnamon.
  • Add dark rum and banana liqueur, light the alcohol carefully.
  • Whisk in heavy cream and cool the sauce.

Garnish and Enjoy the Bananas Foster Cheesecake

  • Remove the collar of the springform pan and smooth the sides.
  • Spoon caramel rum sauce onto the cheesecake.
  • Finish with whipped cream and toppings.

Notes

Use caution when flambeing the sauce. You can replace oatmeal cookies with graham crackers or other crisp cookies.
