Ingredients
  

Apple filling

  • 1 lb peeled, cored and sliced apples (from about 4 apples)
  • 3 tablespoon packed light brown sugar
  • 1 teaspoon ground cinnamon
  • teaspoon ground nutmeg

Crust

  • 1 ½ cups graham cracker crumbs (from about 24 squares)
  • 2 tablespoon packed light brown sugar
  • ¼ teaspoon ground cinnamon
  • 5 tablespoon unsalted butter (melted and cooled)

Crumb topping

  • cup all-purpose flour
  • ½ cup quick oats
  • cup packed light brown sugar
  • ½ teaspoon cinnamon
  • teaspoon ground nutmeg
  • ¼ teaspoon salt
  • cup unsalted butter (melted)

Cheesecake filling

  • 24 oz brick cream cheese (softened)
  • ¾ cup packed light brown sugar
  • ½ teaspoon ground cinnamon
  • 3 large eggs (at room temperature)
  • cup full fat sour cream
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon all-purpose flour

Instructions
 

Preparation

  • Make the apple filling by cooking sliced apples, brown sugar, cinnamon and nutmeg in a skillet over medium heat for 6-7 minutes.
  • Preheat oven to 350°F and line the bottom of an 8-inch round springform pan with parchment paper.
  • Make the crust by blending graham crackers, brown sugar, and cinnamon, then add melted butter. Press into prepared pan.
  • Bake crust for 8 minutes until lightly golden, then reduce oven temperature to 325°F.
  • Make the crumb topping by combining flour, oats, brown sugar, cinnamon, and salt, then add melted butter.
  • Make the filling by beating cream cheese, then adding brown sugar, cinnamon, eggs, sour cream, vanilla, and flour.
  • Assemble the cheesecake by pouring batter into crust, adding apple filling, and topping with crumble.
  • Bake at 325°F for 45 minutes, then turn off the oven and leave it inside for 10 minutes.
  • Cool on a wire rack, chill in the fridge for 4 hours before serving, then drizzle with salted caramel.

Notes

Use a serrated knife to slice for clean cuts.
