Cajun Chicken Orzo

Chicken and Vegetables
- 2 large Chicken Breasts cut into small cubes
- 1-2 tablespoon Cajun Seasoning
- 1 medium Red Onion thinly sliced
- 1 medium Green Bell Pepper thinly sliced
- 5 cloves Garlic thinly sliced
Pasta and Liquid
- 2 cups Orzo
- 3 cups Chicken Stock
- ½ cup Heavy Cream
- ½ cup Parmigiano
Cooking Instructions
Sprinkle chicken with cajun seasoning and toss until evenly coated.
Heat a large pot over medium high heat, add olive oil, and sear chicken until golden brown for 3-5 minutes.
Remove chicken and add onions and peppers with a pinch of salt. Cook for about 3 minutes until starting to tenderize.
Add garlic and stir for 2 minutes to release the flavor.
Add orzo and toast for about 1 minute.
Return chicken to the pot, add chicken stock, and bring to a boil. Reduce to a gentle boil and stir often.
Once the liquid has evaporated, cover the pot and let sit for 5 minutes.
If orzo is too al dente, add more liquid and cook a few minutes longer.
Stir in heavy cream and parmigiano, and finish with flaky salt and pepper to taste.
