Ingredients

Filling

  • ½ cup unsalted butter browned
  • 6 cups frozen sliced peaches no need to thaw
  • ½ cup granulated sugar
  • ½ cup dark brown sugar
  • 1 teaspoon fine sea salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon cardamom
  • ¼ teaspoon ginger
  • ¼ teaspoon cloves
  • 1 tablespoon cornstarch
  • 2 tablespoons bourbon optional
  • 1 teaspoon vanilla
  • 2 tablespoons fresh lemon juice about half a medium lemon

Batter

  • 2 cups granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon fine sea salt
  • 3 teaspoons baking powder
  • 2 cups buttermilk
  • cinnamon sugar to dust top of batter before baking (optional)

Instructions

Preheat and Prepare

  • Preheat the oven to 400°F. Generously spray a 9x13 glass or ceramic pan with baking spray.

Brown Butter

  • Melt butter in a stainless steel sauté pan over medium heat. Cook until foamy and crackling stops, then swirl until nutty aroma and brown bits form. Remove ¼ cup and set aside.

Make the Filling

  • Add peaches, sugars, salt, spices, and cornstarch to the pan with remaining butter. Cook until syrupy, about 10-15 minutes. Stir in bourbon, vanilla, and lemon juice.

Make the Batter

  • Whisk together sugar, flour, salt, and baking powder. Mix reserved browned butter with buttermilk. Combine wet and dry ingredients, stirring until smooth. Reserve ½ cup of batter.

Assemble

  • Pour batter into prepared pan. Spoon peach mixture evenly over batter, then dollop reserved batter on top. Dust with cinnamon sugar if desired.

Bake

  • Bake for 45-55 minutes until bubbling and golden brown. Let sit for 20-30 minutes before serving. Serve with ice cream or whipped cream.
