Brioche (and pain perdu recipe)
A delightful recipe for brioche, featuring a classic pain perdu dish that combines milk-soaked bread and fresh blueberries.

Milk Mixture
- 250 ml cold milk
- 50 ml crème fraiche
- 30 g caster sugar
- 1 whole egg
- 1 yolk egg yolk
Cooking Ingredients
- 140 g butter
- 50 g extra sugar for sprinkling
- 50 ml maple syrup optional
- Blueberries optional, my addition
Preparation
Mix together the milk, crème fraiche, sugar, egg, egg yolk and salt in a bowl.
Cut the brioche into slices, then steep in the milk mixture for 2 minutes. Turn them over and leave for another 2 minutes.
Cooking
In a large frying pan, melt half of the butter and when it begins to foam, add the bread slices and the rest of the butter.
Fry until golden on each side, then serve with extra sugar and berries.
