Ingredients
  

Crust

  • 9 full sheets graham crackers or 1 and ¼ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ¼ cup unsalted butter melted

Blackberry Swirl

  • ½ cup fresh blackberries
  • 1 tablespoon granulated sugar

Cheesecake

  • 16 ounces cream cheese softened to room temperature
  • cup sour cream room temperature
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs room temperature

Instructions
 

Crust

  • Preheat oven to 325°F. Line an 8-inch square baking pan with aluminum foil and set aside.
  • Process the graham crackers in a food processor until fine crumbs. Mix with sugar and melted butter in a bowl until moistened. Press into the baking pan.
  • Bake at 325°F for 10 minutes, then cool on a wire rack.

Blackberry Swirl

  • Blend the blackberries in a food processor until smooth and strain through a fine mesh strainer. Mix with sugar until combined.

Cheesecake

  • Beat cream cheese in a mixer until smooth. Add sour cream, sugar, and vanilla, mixing well. Add eggs one at a time, mixing until just combined.
  • Pour cheesecake filling over the crust, spreading evenly. Spoon blackberry mixture on top and gently swirl with a knife.
  • Bake at 325°F for about 30-35 minutes until set. Cool on a wire rack, then refrigerate for 3-4 hours or overnight before slicing.

Notes

Prep time does not include cooling and chilling time. This recipe can be sliced into 9 larger bars or 16 smaller bars.
