Ingredients
  

For the apple and blackberry crumble

  • 1 whole lemon zest and juice
  • 1 whole orange zest and juice
  • 1500 g cooking apples or 1000g cooking plus 500g eating apples
  • 50-60 g golden caster sugar
  • 500 g blackberries

For the crumble topping

  • 100 g fine plain wholemeal flour or plain flour
  • 100 g ground almonds
  • 100 g porridge oats
  • 50 g soft light brown sugar
  • 150 g cold unsalted butter or 120g chilled coconut oil
  • 100 g mixed seeds such as poppy, flax and sunflower
  • 1 pinch salt

For the custard

  • 300 ml full-fat milk
  • 200 ml double cream
  • 1 whole vanilla pod split, seeds scraped or 2 teaspoon vanilla extract
  • 4 whole free-range egg yolks
  • 25 g golden caster sugar or soft light brown sugar
  • 2 teaspoon cornflour optional

Instructions
 

Method

  • Preheat the oven to 180C/160C Fan/Gas 4.
  • Mix the orange and lemon zest and juice in a large bowl. Peel, core and thinly slice the apples, adding them to the bowl.
  • Transfer the apple mixture to a saucepan, add sugar and cook over medium heat for 15 minutes until softened.
  • Make the crumble topping by mixing all ingredients except seeds in a food processor until crumbly. Stir in seeds and refrigerate.
  • Spread apple and blackberries in a baking dish, top with crumble mixture. Bake for 25-30 minutes until golden-brown.
  • Prepare custard by heating milk and cream with vanilla, then cooling slightly. Beat egg yolks, sugar, and cornflour together.
  • Slowly add warm milk to egg mixture while whisking, then return to heat to thicken.
  • Serve crumble warm with custard.

Notes

Foraged blackberries freeze well and can be used directly from the freezer.
